Ingredients
1 c. cooked rice

2 tbl. Arbequina EVOO
1 medium onion, chopped
3 cloves garlic, minced
8 oz. mushrooms, sliced
2 tbl. tomato paste
1 lb. ground beef or turkey
1 can diced tomatoes
1 1/2 tsp. dried oregano
salt/pepper to taste
6 peppers, any color
optional toppings: cheese, sour cream
Directions
Preheat oven to 400. Prepare rice.
In a large saucepan, add olive oil, mushrooms and onion, cooked until soft.
Add tomato paste and garlic, cook 1 minute.
Add ground meat and cook until no longer pink. Add canned tomatoes, cooked rice, oregano, salt and pepper. Simmer for a few minutes.
Cut the tops off of peppers, clean out insides. Stuff with meat mixture, drizzle with olive oil and cover with foil.
Cook at 400 for about 40 minutes. In the last 5 minutes, remove foil, top with cheese and continue to bake until cheese is melted.
