Fun side dish for any meal!
This is suprisingly easy to make!
1 tbl. + ¼ c. Italian Blend EVOO
salt/pepper to taste
4 garlic cloves (1 for each half)
parmesan to top after
Place artichokes in pressure cooker and cook for about 20-25 minutes.
Remove and cut in half. Clean out the center of artichoke.
Place on baking sheet. Drizzle Italian Blend EVOO over each half. Sprinkle salt and pepper. Crush and place 1 garlic clove in each center cavity.
Roast for about 5-10 minutes until starts to brown.
Remove from oven. Remove the garlic clove, crush and add to remaining olive oil for dipping. Top artichokes with shaved parmesan.
