Peanut Butter Oatmeal Cookies

These cookies are the perfect salty and sweet combination. We love enjoying them as an "on the go" breakfast cookie.

Ingredients
¾ c. flour
¾ c. oats
¼ tsp. sea salt
½ tsp. cinnamon
½ tsp. baking soda
¼ c. brown sugar
2 tbl. sugar

4 tbs. Arbequina EVOO
3 tbl. peanut butter
1 egg, room temperature
1 tbl. vanilla
flaky sea salt
Directions
Mix together: flour. oats, salt, baking soda and cinnamon. Set aside.
In separate bowl, combine olive oil, sugar, and brown sugar.
Add add, peanut butter and vanilla to olive oil mixture.
Slowly add dry ingredients into combined olive oil mixture. Chill in refrigerator.
Shape into balls and place on cookie sheet. Sprinkle with flaky salt.
Bake at 350 for about 11 minutes. Cool and enjoy!

We like to use our Arbequina EVOO in this recipe since it is mild and buttery and compliments this cookie so well!
