1 large zucchini

2 tbs. Meyer Lemon Olive Oil
kosher Salt
Directions
Preheat oven to 225 degrees. Use parchment paper or silicon baking mats to line 2 large baking sheets.
Slice zucchini on a mandolin to create thin slices. Place the slices on a paper towel to absorb any extra liquid then onto baking sheet next to each other forming lines (do not overlap).
Pour olive oil into a small bowl. Using a pastry brush, brush the oil onto each zucchini slice. Sprinkle with salt. Do not over season. Bake for 2+ hours until they start to brown and are crisp.
