Lemon Poppyseed Muffins

Ingredients
2 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 c. sugar
1/4 c. unsalted butter

1/4 c. Coastal Lemon Avocado Oil
2 large eggs, room temperature
1 tbl. almond extract
1 tsp. vanilla extract
1 c. buttermilk
2 tbl. poppyseeds
sliced almonds
Directions
Preheat oven to 375. In a small bowl, combine flour, baking powder, baking soda, and salt.
In a small bowl, combine flour, baking powder, baking soda and salt, set aside.
Cream the butter, avocado oil, and sugar in a large mixing bowl until combined. Add dry ingredients slowly until combined. (Do not over beat)
Add poppyseeds and stir gently until combined.
Fill 6 Jumbo sized muffin tins (or 12 regular size) until almost full. Sprinkle with almonds.
Bake for 20-25 minutes or until a toothpick comes out clean but moist.
Remove from oven and cool for 5 minutes.
