These lemon crinkle cookies use olive oil in place of butter. Why not add antioxidants and a little vitamin E to your baked goods?

Ingredients
½ tsp baking soda
½ tsp baking powder
½ tsp salt
2 ¼ c flour
1 ¼ c sugar (plus extra for rolling)

⅓ c Meyer Lemon Olive Oil
2 eggs (room temperature)
½ tsp vanilla
Directions
Preheat oven to 350.
Mix together flour, baking soda, baking powder, and salt. Set aside.
In a separate bowl, mix olive oil and sugar. Add eggs and vanilla.
Slowly fold in dry ingredients.
Scoop 1 tbl of dough, roll in sugar and place on cookie sheet. Bake for 12 minutes, cool and enjoy!
Recipe Note
If you love these with lemon olive oil, you can try them with our Valencia Orange or Persian Lime Olive Oil.
