Such a yummy side dish. We are excited to experiment with many different variations of this dish!

Ingredients
2 c. corn
¼ c. cornmeal
⅓ c. flour
1 tsp. smoked paprika
2 eggs
1 green onion, chopped
1 green chili, chopped
½ c. grated parmesan
1 bunch cilantro, chopped
1 tbl. lime juice
1 tsp. salt
½ tsp. pepper

1-2 tbl. All Natural Avocado Oil
Directions
Chop green onion and green chili.
Mix dry ingredients: cornmeal, flour, paprika, parmesan, salt, and pepper.
Mix wet ingredients: corn, eggs, green onion, chili, cilantro, and lime juice.
Mix together dry and wet ingredients.
Using a ¼ c. measuring cup, spray cup with cooking spray to avoid sticking.
Add avocado oil to hot pan. Scoop ¼ c. mixture into pan. Flatten with bottom of cup to form round “patty”.
Cook for 3-4 minutes each side until browned.
