Olive Oil Chocolate Chip Cookies

What's not to love about a homemade chocolate chip cookie? Did you know that you can substitute olive oil for the butter in any recipe?

Ingredients

1 c. Arbequina EVOO
1 tbl. vanilla extract
¾ c. brown sugar
¾ c. sugar
1 tsp. salt, plus extra to sprinkle on top
1 large egg, room temp
2 c. flour
½ tsp. baking soda
2 c. chocolate chips
Directions
Preheat oven to 350. Line baking sheets with parchment paper.
In a large bowl, mix together olive oil, vanilla, both sugars and salt. Add egg and blend until smooth.
In a separate bowl, mix the flour and baking soda. Slowly add to wet ingredient bowl and mix. Fold in the chocolate chips.
Scoops batter and roll until balls (about 2 tablespoons each). Slightly flatten, making sure they have about 2 inches between each cookie. Lightly sprinkle with salt.
Bake about 10-2 minutes or until golden brown around edges. Let cook about 5 minutes and enjoy!
Recipe Note
It's best to use a mild, smooth EVOO. We love using our Arbequina EVOO!
