Ingredients
2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. black pepper
1 egg
1 1/2 c. milk
1/4 c. plain yogurt

1/3 c. Arbequina EVOO
1 c. grated cheddar cheese
6 slices bacon
3 c. spinach
2 tbl. chives, minced
Directions
Preheat oven to 375. Grease a muffin tin.
Cook bacon until crisp, crumble. Transfer to a paper towel to drain. Leave bacon grease in pan.
Add spinach to the pan and cook 2-3 minutes until wilted. Transfer to paper towel with bacon to drain.
In a medium bowl, combine all dry ingredients: flour, baking powder, baking soda, salt, and black pepper, stir until combined.
In a separate bowl, combine wet ingredients: egg, milk, yogurt and olive oil, whisk together.
Add the dry ingredients into the bowl with the wet ingredients until batter is smooth with no lumps.
Add bacon, spinach, cheese and chives and gently fold into batter.
Divide batter into muffin tins. Bake for 20-25 minutes until toothpick comes out clean.
