Angel Hair Pasta with Yellow and Green Tomatoes
Light and easy meal!
Angel Hair Pasta with Fresh Tomatoes
4 tbs. Arbequina Blend EVOO, divided
4 garlic cloves, minced
2 large shallots, minced
1 lb. yellow and red tomatoes, diced
1 lb. ripe green heirloom tomatoes
1/4 c. chopped fresh basil
2 sage leaves, finely chopped
1/2 lb. angel hair pasta
In a skillet, heat 2 tbs. olive oil. Add the garlic and cook on low heat until fragrant, 2 minutes.
Add the shallots and cook over moderate heat, stirring until softened, about 4 minutes.
In a bowl, toss the tomatoes with the garlic, shallots, basil and sage. Season with salt.
In a pot of boiling water, cook the pasta until al dente: drain and transfer to the large bowl.
Toss well with the remaining 2 tbs. of olive oil, serve.
