Mediterranean Pasta Salad

This yummy pasta salad is tangy and delicious! Leftovers are great for lunch!

Ingredients

¾ c. Italian Blend EVOO

¼ c. Serrano Chile Honey Vinegar
1 tsp. dried basil
1 tsp. dried parsley
1 tsp. dried oregano
¾ tsp. garlic powder

1 tsp. Coastal Wildflower Honey
2 tbl. grated parmesan
salt/pepper
2 c. spinach
2 c. cooked pasta (Fideo, Orzo, Farfalle) chilled
1 red bell pepper, chopped
1 cucumber, chopped

8-10 Garlic Stuffed Olives, sliced
½ c. feta
½ red onion, chopped
Dressing
Salad
Directions
Cook pasta, chill.
Mix together all dressing ingredients in dressing bottle. Set aside.
Chop veggies (onion, pepper, cucumber) with chopper. Slice stuffed olives.
Build salad with spinach, pasta, veggies, and feta in salad bowl.
Pour dressing over salad, toss with salad hands. Serve in bowls.
Recipe Note
A few other ingredients that would be great with this salad: yellow or orange bell peppers, tomatoes, and artichokes.
